Yummy Chocolate Shortbreads!

In a small bowl, whisk flour and cocoa powder together. Set aside.

In a separate bowl, beat butter, vanilla, and sugar with a stand or handheld mixer on medium speed until smooth; about 3 minutes.

Mix together
Mix all ingredients!

Switch the mixer speed to low and gradually add in the flour mixture, until just combined. The dough will have a chocolate tint to it ?. That’s pretty much all the ingredients you need!

Roll it
Roll up the goodness!

Roll the dough into a log about 2 inches (5cm) in diameter, wrap well, and refrigerate until very firm, about 2 hours. I’m not sure if I rolled to the measurements it asked for…. but it was done. The 2 hour wait kind of stinks, but I understand why it is needed. So make sure you plan your timing in advance when you bake these cookies. Also, it may not look appealing at this point, but patience ?!

When ready to bake, preheat the oven to 325°F (165°C) and line 2 baking sheets with parchment paper. Cut the dough into ¼ inch (7mm) thick slices and place on the prepared baking sheet and bake for 18-20 minutes. Let cool on wire racks. Again, not sure if I sliced them accurately based on the recipe’s measurements, but definitely came close. They still don’t look appealing. They actually look like slices of liverwurst ?. But they will come out delicious!

Once cooled, melt the chopped chocolate in the microwave on low power or over low heat on the stove and drizzle over the cookies. Let set and harden before storing. Love the smell of chocolate cooking on the stove!

This was my first time making shortbreads and it was so easy!! I loved that it required minimal ingredients! Even the prep time was not bad. However, the storing of the dough and waiting for two hours was annoying, but that is because I was impatient! ? The melting of the chocolate on the cookies added a lovely touch to them. The actual shortbread was not overly sweet and the addition of the melted chocolate added a nice elevated sweetness to the cookie. I will definitely add this one to my cookie recipes collection!
